Pricing & Payment Options
The price of our beef can fluctuate depending on many different factors. To get
our current price, please contact us.
Our prices are based on hanging weight and are usually sold as
a half beef (approximately 375 lbs.) or a quarter beef (half
of a half, approximately 185 lbs.). We can usually give better prices on
quantities greater than a half beef.
A Word about Hanging Weight
All of our beef is priced based on Hanging Weight. Hanging weight is the weight
of the beef after it’s been butchered but before it’s been sliced up. Think of it
as a big piece of meat hanging in the butcher’s freezer, or if you’re a Rocky fan,
think of it as a punching bag. Some of this is bone that will be removed and fat
that will be trimmed. Typically, 65% of the hanging weight will end up in packages.
This number includes the variety meats such as liver, heart, tongue, tripe, sweetbreads
and brains. The actual weight that ends up in your packages can vary by as much as
10% or more depending on how you have your beef processed. The weight that
ends up in your freezer depends on what cuts of meat you choose (boneless, like
Stips and Filets or bone-in like T-bones), whether you have bones removed from your
roasts, whether you have the butcher aggressively trim fat, and whether you get
the variety meats. While this may seem overwhelming, please keep in mind that regardless
of how you have your beef processed, you are getting the same amount of meat after
the butcher starts cutting as was there before he started cutting. The only difference
is the bones and fat.
Delivery
We currently offer delivery to the St. Louis metro area, the Kansas City metro area,
and most of nothern Missouri. If you are outside these areas, please
call us and we'll do our best to help you determine the cost of delivering
or shipping your beef.

Information You Need To Know
Before you order, there are a few things you need to know.
- All of our beef is All-Natural, Hormone-Free Angus Beef. For more information,
visit the Farm, Family, & Beef page.
- You can choose the way you want your beef cut. If you want more hamburger and fewer
roasts, it’s completely up to you. You can even get it all as hamburger--the most
delicious hamburger you’ve ever eaten. If you're unsure about how you want your
beef processed, our butcher would be happy to help you determine the optimum way to process
your beef.
- A full beef consists of around 750 lbs. of beef hanging weight. We split this into
halves and quarters as needed. Obviously, we’re still talking about a lot of beef,
so you’ll need a freezer. A quarter of beef will
require about 4 cu. ft. of freezer space, and a half will require about 7.5 cu.
ft. of freezer space.
- The beef is typically aged 14-21 days. This increases the tenderness and flavor
of the beef. We feel this is the optimum length of time to age our beef, but if
you'd like your beef aged longer, please let us know and we'd be happy to accomodate
you.
- The beef isn’t treated with any preservatives. It’s cut and immediately frozen at
very cold temperatures ("flash frozen"), which locks in the freshness and flavor
and prevents spoilage without the use of chemicals.

Keep in mind that this will vary depending on the size of the beef when it's butchered.
Each row represents a particular part of the beef and the way it can be cut. If
there are certain cuts not listed that you would prefer, please
let us know. We'd be happy to work with you. Hamburger can be packaged as
pre-formed patties for a small additional fee.
